Barley and Corn Salad
(Serves: 2)
Ingredients
- 1/4 cupbarley ,washed and drained
- 1 cup sweet corn kernels
- 1/2 cup chopped red and yellow capsicum
- 2 tbsp finely chopped coriander
- 3/4 cup finely chopped spring onions (whites and greens)
- Chat masala to taste
- 2 tsp lemon juice
- salt to taste
How to make
- Combine the barley and sweet corn with 2 cups of water& cook until done.
- Drain and keep aside to cool slightly.
- Combine all the other ingredients including cooked barley &sweet corn in a bowl and toss well.
- Refrigerate it for at least 1 hour and serve chilled.
Tip – The discarded barley water can be used for vegetable gravies or dals as it is rich in various vitamins.
