Lemon Coriander Soup

(Serves: 1)

Ingredients
  • ½ cup chinese cabbage coarsely chopped
  • ½ cup chopped carrots
  • ½ cup chopped spinach
  • 5-6chopped mushroom
  • ¼ cup fresh coriander
  • Salt to taste
  • White pepper to taste
  • Lemon juice to taste
  • 2.5 cup water
  • A coriander sprig to garnish
How to make
  1. Sauté all the vegetables using just 1tsp of oil.
  2. Prepare coriander stock with fresh coriander and water. Blend the coriander finely with water using hand blender.
  3. Add sauted vegetables to it.
  4. Add salt, lemon juice and white pepper.
  5. Garnish with coriander sprig & serve hot.
