Barley Soup

(Serves: 1)

Ingredients
  • 1Tbsp olive oil
  • 1/2 med onion diced
  • 1 clove garlic mince
  • 1/4 cup pearl barley
  • 1 cup vegetable broth
  • Salt and pepper to taste
  • 1Tbsp chopped fresh parsley
  • 1Tbsp fresh lemon juice
How to make
  1. Saute the onion and garlic in the olive oil for 5 to 7 minutes
  2. Add barley and 1½ cup water. Cover. Bring to a boil and simmer until tender (about 25 minutes).
  3. Stir in the vegetable broth and salt and pepper to taste. Simmer for 5 -10 min.
  4. Add parsley and lemon juice before serving.
