Carrot Beet Soup

(Serves: 1)

Ingredients
  • 1 medium carrot
  • 1/2 medium beet root
  • 1” piece ginger pasted
  • 2 bay leaves
  • 1 green chilly split
  • Fresh coriander for garnish
  • ½ tsp cumin seeds
  • 2 cups water
  • Salt to taste
  • ½ tsp oil
How to make
  1. Pressure cook carrot & beetroot with salt & water for 15 min. Blend the mixture very well using a hand blender.Adjust the consistency of soup by adding more water if needed.
  2. Heat oil. Add bay leaf, cumin,greenchilly and ginger paste to it. Saute for 1 minute.
  3. Add the seasonings to pressure cooker & simmer for 5 minutes.
  4. Garnish with coriander before serving.
