Cheesy Carrots

(Serves -2)

Ingredients
  • 250g fresh carrots
  • 1 teaspoon olive oil
  • Salt to taste
  • Cracked black pepper to taste
  • 1Tbsp fresh basil choppe
  • 1Tbsp freshly grated Parmesan
How to make
  1. Preheat oven to 450°F.
  2. Peel carrots and cut into thin slices.
  3. In a medium bowl, toss carrot slices in olive oil, salt and pepper.
  4. Spread out carrots on a baking sheet and bake for 12 to 15 minutes or until the carrots are browned slightly.
  5. Remove from the oven and sprinkle with fresh basil and Parmesan cheese before serving.
