Corn Palak Rolls

(Serves: 2)

Ingredients (For Rolls)
  • ¾ th cup chopped spinach
  • 1/2 tsp lemon juice
  • 1/2 cup whole wheat flour
  • 1/2 green chilli
  • 1 tsp oil
  • salt to taste
  • whole wheat flour for rolling
Ingredients (For Stuffing)
  • ¼ th cup boiled corns
  • 1 onion sliced
  • 1 tomato pureed
  • ¼ cup chopped capsicum
  • Salt & pepper to taste
  • ¾ thtsporegano
How to make
  1. Combine the spinach, lemon juice and green chilly in a mixer and blend to a smooth purée.
  2. Add salt to the spinach purée and knead to a soft dough using enough water. Keep aside covered.
  3. Saute the onions & capsicum. Add the boiled corns ,tomato puree followed by adding salt ,pepper & oregano.Simmer for 5 min.The filling is ready.
  4. Now divide the dough into 2 equal portions and using a little whole wheat flour for rolling, roll into thin chapatis.
  5. Heat a ceramic tava (griddle) and cook each chapati on both sides, using not more than 1 tsp oil, till brown spots appear on both the sides.
  6. Put the filling over the chapati& roll. Serve hot.
