Crispy Vegetable Salad

(Serves:1)

Ingredients
  • 100 g of cabbage finely chopped
  • 1 large carrot sliced
  • 6-7 radish slices
  • 1 onionfinely chopped
  • 150 g plain low-fat yogurt
  • Pepper to taste
  • A fist full of unsalted roasted peanuts
  • 2 tbsp chopped parsley
How to make
  1. Mix the cabbage, carrot and onions in a large bowl.
  2. Add yogurt to it and season with pepper.
  3. Just before serving, top it with the radishes, peanuts and the parsley.
