Egg Drop Soup
Egg Drop Soup
(Serves: 2)
Ingredients
Soup Ingredients
2 cup vegetable stock
2 eggs
Salt & pepper to taste
½ inch piece fresh ginger, peeled and cut into rounds
1 stem lemongrass, bruised
1 star anise
2 whole cloves
1/2 cinnamon stick
6 mushrooms, thinly sliced
2 spring onions(whites and greens) thinly sliced
Coriander for garnish
How to make
Prepare the vegetable stock and place over medium-high heat.
Tie the ginger,lemon grass,star anise,cloves,cinnamon into a spice bag and add it to the stock.
Simmer for 15 min & remove the muslin bag. Add salt and pepper to taste.
Add spring onions and mushrooms and simmer for five minutes.
Beat eggs with 2 tablespoons of cold water. Using a fork, stir egg mixture into soup and simmer for about 2 minutes.
Serve immediately garnished with coriander.
