Egg Drop Soup

(Serves: 2)

Ingredients

  • 2 cup vegetable stock
  • 2 eggs
  • Salt & pepper to taste
  • ½ inch piece fresh ginger, peeled and cut into rounds
  • 1 stem lemongrass, bruised
  • 1 star anise
  • 2 whole cloves
  • 1/2 cinnamon stick
  • 6 mushrooms, thinly sliced
  • 2 spring onions(whites and greens) thinly sliced
  • Coriander for garnish
How to make
  1. Prepare the vegetable stock and place over medium-high heat.
  2. Tie the ginger,lemon grass,star anise,cloves,cinnamon into a spice bag and add it to the stock.
  3. Simmer for 15 min & remove the muslin bag. Add salt and pepper to taste.
  4. Add spring onions and mushrooms and simmer for five minutes.
  5. Beat eggs with 2 tablespoons of cold water. Using a fork, stir egg mixture into soup and simmer for about 2 minutes.
  6. Serve immediately garnished with coriander.
