Macaroni & Beans Soup

(Serves: 1)

Ingredients
  • ½ tsp cooking oil
  • 1/4 tspheeng (asfoetida)
  • 1 tsp cumin powder
  • 1 cup yellow or red peppers
  • 1 carrot cut into small cubes
  • 1/2 cup chopped beans
  • 1/2 cup boiled kidney beans
  • 1/2 cup boiled macaroni
  • 2 tomatoes
  • 2 Tsp tamarind pulp
  • Salt and pepper
  • 2 tsp mint leaves
  • Cheese, to garnish
How to make
  1. Heat oil in a pan & add heeng & cumin powder.
  2. After few seconds add the carrots and beans. Sauté them.
  3. When carrots and beans are almost done add bell peppers& sauté for another 2-3 minutes.
  4. Now add the kidney beans. Mix well and add the boiled macaroni.
  5. Puree the tomatoes & add tamarind pulp to the puree. Add the tomato-tamarind sauce to the soup.
  6. Add some water if needed to adjust the consistency of the soup.
  7. Season with salt and pepper.
  8. Let it simmer for a while till it thickens.
  9. Garnish with mint and grated cheese before serving.
