Whole Wheat Quesadillas

(Serves: 6)

Ingredients
  • 1 cup whole wheat flour
  • 1/4 cup skimmed milk
  • salt to taste
Ingredients – For Stuffing
  • 1 cup soaked rajma (kidney beans)
  • 1/2 cup finely chopped onions
  • 1/2 cup finely chopped tomatoes
  • 1/2 tsp chilli powder
  • 1 tsp cumin seeds (jeera) powder
  • 2 tbsp finely chopped coriander
  • 1/2 tspchaat masala
  • 1.5tsp lemon juice
  • salt to taste
How to make
  1. Combine all the ingredients to prepare the dough in a deep bowl, mix well and knead into a soft dough using enough water.
  2. Cover the dough with a lid and keep aside for 15 minutes.
  3. Boil & slightly mash rajma.Add rest of stuffing ingredients to it.Mix well.
  4. Roll a portion of the tortilla dough into a thin disc using a little whole wheat flour for rolling.
  5. Place a tortilla on a flat, dry surface, spread a portion of the stuffing on half of the tortilla and fold it over to make a semi-circle.
  6. Heat a ceramictava (griddle) and cook the quesadilla on a slow flame till golden brown spots appear on both the sides.
